    ½ K Calabaza butternut squash o cualquier calabaza pelada sin semilla cortada en cuadritos de ¾ pulgada, 2 Pimientos naranja cortados en tiras de 1 pulgada., 4 Dientes de ajo rebanados, 1 C Hojas de tomillo, ½ C Chile de árbol,, ¼ T Aceite de oliva, 500 G Pasta negra, Queso parmesano, ½ T Aceitunas negras picadas

    Casserole “Recipe\r
    Ingredients:\r
    brussels sprouts\r
    cauliflower\r
    onions\r
    pearl onions\r
    carrots\r
    butternut squash\r
    garlic cloves\r
    turkey bacon\r
    \r
    Sauce:\r
    canned pumpkin\r
    almond milk\r
    vegetable broth\r
    seasonings: salt, garlic powder, garam masala, cumin, sage\r
    carrot puree\r
    nutritional yeast\r
    \r
    Roast your veggies– toss with a little olive oil, salt & pepper, and roast at about 400-425 for 20-30 minutes.\r
    Blend your sauce and season to taste.\r
    Mix the sauce and vegetables in a large dish.\r
    Top with breadcrumbs.\r
    Bake for an additional 20-30 minutes.\r
    Devour!\r

    French Onion Soup\r
    \r
    1 tbsp oil\r
    2 tbsp butter\r
    5-6 large onions, finely sliced\r
    salt and pepper\r
    ½ tsp sugar \r
    2 tbsp flour\r
    2/3 cup apple cider OR red wine\r
    8 cups vegetable or beef broth\r
    2-3 sprigs fresh thyme\r
    baguette crostini or croutons\r
    Gruyere cheese, grated\r
    \r
    In a large Dutch oven or saucepot heat oil and butter over medium heat.\r
    Add onions and stir until they are well coated.\r
    Cover and cook onions for 15 minutes.\r
    Remove the lid and season the onions with salt, pepper and sugar.\r
    Cook the onions for an additional 30 minutes, stirring often. Onions should be deep golden brown.\r
    Once onions are caramelized stir in flour and cook for 1 minute.\r
    Add broth and fresh thyme and bring the mixture to a boil.\r
    Reduce heat to medium-low and simmer for 30 minutes.\r
    Ladle soup into individual, oven-safe bowls and top with crostini and cheese.\r
    Bake at 375°F until cheese is melted and bubbly.\r
    Serve hot from the oven.\r
