    Sweet potato gulab jamun is popularly known in Bengal is one heavenly dessert that make good use of superfood.\r
    \r
    INGREDIENTS:\r
    \r
    Sweet potato(boiled and grated) 1 cup\r
    Khoya 1 tbs\r
    All purpose flour 1 tsp\r
    Cooking soda 1 pinch\r
    Cardamom powder 2 pinch \r
    Oil To fry\r
    Sugar syrup 1 ½ cup\r
    \r
    METHOD:\r
    \r
    1. Boil sweet potato but it should not be mashy, remove the skin and grate it into a bowl..\r
    \r
    2. Take a mixing bowl, add sweet potato and knead it well without any lumps.\r
    \r
    3. Add khoya, all purpose flour, cooking soda, cardamom powder and knead it perfectly.\r
    \r
    4. Divide into equal portions and make roundels without any cuts.\r
    \r
    5. Heat oil in a pan, place the jamun and mix it with wooden spoon like as shown in video on slow flame until slightly golden in colour.\r
    \r
    6. Transfer hot fried jamun into slightly hot sugar syrup with cardamom powder and allow it rest for 1-2 hours.\r
    \r
    7. Now sweet potato gulab jamun is ready to serve.

    Sweet Potato Gnocchi\r
    INGREDIENTS:\r
    Garlic\r
    ½ cup onion – finely chopped\r
    ½ cup chickpeas\r
    2 tbsp Mac and cheese sauce ( Recipe from day 5) \r
    Ramen Stock \r
    ½ cup black beans\r
    ½ a lemon\r
    Sweet potato\r
    2 tbsp flour\r
    \r
    Finely slice some garlic ( Goodfellas Style!) and scrape into a paste. \r
    In a greased pan add your onion and garlic pate and allow to cook down. \r
    Add in ½ a cup of chickpeas until they slightly start to brown. \r
    Add in your mac and cheese sauce. \r
    Add a splash of ramen stock. \r
    Add in your black beans, squeeze in lemon and add salt and pepper to taste. Toss in your lemon scrap for extra flavor.\r
    Place a sweet potato in oven at 400 degrees Fahrenheit for 45 minutes or until super tender. \r
    Peel the skin off the sweet potato and lightly mash it. Add salt to extr moisture. \r
    Now you can completely mash your sweet potato and add in your flour. Carefully fold it in. Do not over mix. \r
    Place small scoops of sweet potato into boiling water. Boil for about 3 minutes and remove. \r
    Transfer your sweet potato gnocchi to the pan with chickpeas and black beans and serve. \r

  • HOwto - Loaded Baked Potato Soup (Crock Pot Girls)

    Loaded Baked Potato Soup

    6 large potatoes, peeled and cubed
    1 large onion, diced
    1 quart chicken broth
    3 garlic cloves, minced
    1/4 cup butter
    Salt to taste
    Pepper to taste

    1 cup cream or 1 cup 1/2 and 1/2 cream
    1 cup shredded sharp cheddar cheese
    Garnish: chives, sour cream, bacon, and cheese

    Directions:

    Combine first 7 ingredients in a large slow cooker and cook on high for
    4 hours or low for 8 hours (potatoes should be tender). Then you will
    need to mash potatoes until coarsely chopped and soup is slightly
    thickened. Stir in cream and cheese. Garnish with toppings.

    Runners should eat a small handful of almonds at least three to five times per week. Nuts, especially almonds, are an excellent source of vitamin E, an antioxidant that many runners fall short on because there are so few good food sources of it.     For Dough:\r
    • 2 cups wheat flour\r
    • ½ tsp salt \r
    • 1/2 teaspoon oil\r

    • Put whole wheat flour and salt in a large mixing bowl. Add water little at a time and knead the dough till it becomes soft, pliable and smooth in texture. \r
    • Put some oil all over the dough and smoothen the dough little bit more. Cover and let it rest for 15 minutes. Meanwhile, lets prepare our stuffing.\r

    2 Lbs Ground Beef\r
    6-7 Medium Russet Potatoes\r
    1 Small Onion, Chopped\r
    1 To 1-1/2 Cups Frozen Peas & Carrots\r
    4 Tbs Margarine Or Butter\r
    3 Tbs All-Purpose Flour\r
    2 Cups Water\r
    1/2 Cup Whole Milk\r
    1/4 Cup Graded Parmesan Cheese\r
    1/4 Cup Philadelphia Cream Cheese\r
    3-4 Tbs Ketchup\r
    2 Tsp Worcestershire Sauce\r
    1 Beef Flavor Bouillon Cube\r
    1 Tsp Minced Garlic\r
    2 Tsps Salt\r
    2 Tsps Black Pepper\r
    1-1/2 Tsp Paprika\r
    1 Tsp Sugar\r
    1/2 Tsp Thyme\r
    1/2 Tsp Parsley Flakes\r
    \r
    Instructions\r
    \r
    1. Place a pan over high heat and add ground beef.\r
    \r
    2. Chop up onion and add to pan once ground beef browns.\r
    \r
    3. Add the ketchup, worcestershire sauce, bouillon cube, minced garlic, 1 tsp salt, 1 tsp black pepper, 1 tsp paprika and thyme.\r
    \r
    Stir in well.\r
    \r
    4. Combine water and flour. Stir until flour dissolves.\r
    \r
    5. Then add slurry to pan of ground beef.\r
    \r
    6. Reduce heat to medium heat and allow meat to simmer until juice turns into a thick gravy.\r
    \r
    7. Once gravy thickens, remove meat and gravy from pan and place in a baking pan.\r
    \r
    8. Add the peas and carrots to the meat and stir in until well blended.\r
    \r
    9. Peal the potatoes.\r
    \r
    10. Slice and dice them into small even size shapes.\r
    \r
    11. Place a pot of water over high heat. Once water comes to a boil add potatoes, cook for 20 minutes, then drain water.\r
    \r
    12. Place the potatoes back in the pot and place pot over high heat. Mash potatoes and make sure potatoes are on the dry side before adding the ingredients. Then add your milk, cream cheese, margarine or butter and stir in well. Then add the graded parmesan cheese, egg yolk, sugar, the remaining salt and pepper then stir in again.\r
    \r
    13. Place the potatoes over the ground beef and vegetables.\r
    \r
    14. Smooth potatoes out with a fork.\r
    \r
    15. For decoration purposes, garnish with 1/2 tsp paprika and parsley flakes.\r
    \r
    16. Bake on 400 degrees for about 30 minutes.

    2 clean organic potatoes sliced into 1mm slices\r

    Vegan Quiche Filling\r
    1 tbs nutritional yeast\r
    1/3 cup chick pea flour (Besan flour)\r
    1/4 cup cashews\r
    1/2 cup oats\r
    1 cup dairy free milk (soy, almond, oat, rice etc)\r
    3 tbs lemon juice\r
    2 - 4 garlic cloves\r
    1 tsp celtic sea salt + 1/2 tsp black Himalayan salt (if you dont have this, then just use another 1/2 tsp of celtic sea salt)\r

  • Stuffed Rava Idli Recipe - Healthy Indian Evening Snacks Recipes

    Sooji or Rava idli is a very healthy Indian recipe as an option for breakfast or Kids lunch box. Generally, kids dont like idli. But they will love this idli recipe because of its stuffing. Full recipe: \r
    \r
    Ingredients:\r
    For Idli Batter:\r
    2 cups of Semolina\r
    1 cup of thick yoghurt\r
    Salt to taste\r
    1 sachet Eno\r
    \r
    For stuffing:\r
    3 medium-sized boiled and mashed potatoes\r
    1/3 cup French beans finely chopped\r
    1 medium sized Onion finely chopped\r
    1/3 cup carrot finely chopped\r
    1/4 cup Capsicum finely chopped\r
    1/4 cup boiled peas\r
    Finely chopped Spring Onions\r
    ½ inch piece of grated ginger\r
    ½ tsp Mustard seed\r
    Few sprigs of curry leaves\r
    3/4 tsp Sambhar Masala\r
    Salt to taste\r
    1/2 tsp Garam masala\r
    1/2 tsp Coriander powder\r
    1/4 tsp mango powder\r
    1/4 tsp Turmeric powder\r
    1/2 tsp red chilly powder\r
    1 ½ -2 tsp Oil \r
    \r
    How to make sooji or Rava Idli for Breakfast:\r
    1. Take a deep bowl and add suji/semolina, yoghurt, salt, and mix it well. Now add water gradually and make a smooth batter. Keep on adding water until you get the proper consistency. The batter should not be very thick or thin. The consistency of the batter should be pourable.\r
    2. Mix it well with a spoon so that there should be no lumps in the batter.\r
    3. Cover it and let the batter rest for 15-20 minutes. Meanwhile, lets prepare the Stuffing.\r
    4. Take a non-stick pan and put oil in it, once the oil becomes hot add mustard seed and let it crackle. Now add few curry leaves, grated ginger and all the chopped veggies (Onion, fresh and boiled peas, capsicum, carrot, French beans). Sauté it on medium flame and cook till it becomes little soft. Do not overcook the veggies let it be crunchy. Once the veggies become little soft add boiled and mashed potatoes, finely chopped spring onions and all the spices-Salt to taste, red chilly powder, turmeric powder, coriander powder, mango powder, garam masala, sambhar masala, mix it until all the spices get blended well with the mixture. Keep aside and let it cool down for some time.\r
    5. After 15 minutes uncovered the batter and you will see the batter has become smooth and slightly thick as rava absorbs the water so add water accordingly to get the right consistency, mix it well. \r
    6. Batter is ready now but before adding eno keep the water for boiling and grease the mould. \r
    7. Take a deep pan and pour 1 1/2 glasses of water in it and let the water boil. Make sure that the water should start boiling before placing the idli mould in it. \r
    8. Now take an Idli mould and grease the idli moulds with some oil and keep aside.\r
    9. At the very end add eno and mix it well. After adding eno/soda do not stir too much otherwise bubbly effect will go away. After adding eno fruit salt doesnt keep batter for a long time otherwise Idli will not be spongy so spread the batter immediately. \r
    10. Now take your greased idli moulds and spoon a tablespoon of batter in the bottom and put the mixture patties in the centre of batter (To make the stuffing easy I have made small thin patties but you can also spread the mixture on top of the batter). Now spoon a tablespoon of batter again on top. Make sure that everything is totally covered.\r
    11. Repeat the same process for rest of the idli moulds.\r
    12. Put the idli mould in boiling water, cover with the lid and cook it for 7-8 minutes on medium flame.\r
    13. After 7-8 minutes uncovered the lid and you will see the Stuffed Rawa idli has become fluffy. Take out the idli mould from the pan and let it cool down for some time. Once it cools down a bit scratch the sides with a knife and removes the Stuffed Rawa Idli from it.\r
    14. Cut Stuffed Rava Idli into half and serve hot. It goes well with coconut/nariyal chutney but if you do not have nariyal chutney can serve with any coriander chutney or tomato ketchup.\r

    1/3 C. Organic Crunchy Peanut Butter\r
    2/3 C. Unsweetened Applesauce\r
    1 Tsp. Vanilla\r
    1/2 Tsp. Salt\r
    1/2 Tsp. Cinnamon\r
    1 1/2 C. Quick or Old Fashioned Oats\r
    1/4 C. Nuts (I used dry pecans.)\r
    1/4 C. Semi Sweet Chocolate Chips\r
    1/4 C. Shredded Coconut\r

    »Preheat the oven to 350 degrees. Mix together the bananas, peanut butter, applesauce, and vanilla. Add in the oats, nuts, chocolate chips, and coconut; mix until well combined.\r
    \r
    »Spoon a rounded 2 tbsp. of the cookie mixture onto the non-stick baking sheet, leaving an inch or two between each and flatten slightly. I placed a few more chocolate chips on top of each cookie. Bake for 15-17 minutes and allow to cool slightly.\r

    Coconut Oil Chocolate Fudge\r
    1 cup coconut oil, melted\r
    1/3 cup coconut milk\r
    1/3 cup cacao or cocoa powder\r
    1/3 cup honey\r
    2 teaspoons vanilla extr\r

    »Combine all ingredients in a bowl and mix until smooth and well mixed.\r
    »Pour into a lined loaf 8x4 pan.\r
    »Refrigerate overnight. \r

    Baked Pears with Walnuts and Honey \r
    › 2 large ripe pears\r
    › 1/4 tsp ground cinnamon\r
    › 2 tsp honey\r
    › 1/4 cup crushed walnuts\r

    »Preheat the oven to 350°F. Cut the pears in half and place on a baking sheet (I cut a sliver off the other end so they sat upright). Using a spoon, scoop out the seeds.\r

    »Sprinkle with cinnamon, top with walnuts and drizzle 1/2 teaspoon honey over each one. Bake in the oven 30 minutes.\r

    A: YES! Fruit is healthy and is full of fibre, water & NUTRIENTS! So dont be afraid of some fruit. Carbohydrates are what our bodies thrive and run off so eat what makes you feel good and thrive being vegan. For me its generally fruit meals during the day!\r

    Our everyday bento lunch box.\r
    On the days my husband has work, I get up a little earlier and make bento for him.\r
    My husband use a microwave in his office to warm the bento.\r
    I put the food which doesnt need to be warmed in a small container, and my husband puts it in the fridge when he arrives at his office.\r
    On that day, I was going to bring his bento to his work and eat lunch together, but he didnt have enough time so I just handed the bento to him.\r
    Its pretty tough to make bento every day, but I can manage it because my husband always eats everything and says its delicious.The dishes are all common, but these may be the best!\r

    いつものおかずのお弁当です。忙しい朝には、前日の残りの煮物なんかを詰めます。\r
    この時期、そら豆は、ほくほくでとっても美味しいですよね。\r
    天ぷらで食べるのも大好きです。\r
    この日は、家族の所へ届けて一緒に食べるはずが、仕事の都合上、時間が合わず会社まで届けてきました。いつもの普通のお弁当ですが、案外それが一番のご馳走かも^^\r

    Dishes for bento lunch box\r
    【Ingredients】\r
    *Simmered dish\r
    chicken thigh, bamboo shoot, carrot, shiitake mashroom\r
    seasoning (sake, mirin(seasoning liquor), soy sauce)\r
    *Salad\r
    broad beans, potato\r
    seasoning (salt, pepper, mayonnaise)\r
    *Japanese Rolled omlet\r
    for 3 eggs\r
    seasoning (2 tbsp sugar, 1 tbsp mirin, 1/2 tsp soy sauce)\r
    *Deep-fried chikuwa with cheese\r
    chikuwa (tube-shaped fish paste cake), processed cheese\r
    breadcrumbs, tempura flour (or cake flour, eggwash and breadcrumbs)\r
    \r
    【Directions】\r
    *Simmered dish\r
    ①Cut chicken thigh into small pieces. Cut bamboo shoot, carrot, and shiitake mashroom as well.\r
    ②Heat sesami oil in a pot, then put chicken thigh and fry until brown.\r
    ③When the chicken thigh is brown, add carrot (takes more time to heat) and fry.\r
    ④Add bamboo shoot and shiitake mashroom, and fry.\r
    ⑤Add water up to the ingredients to be under the water, when it starts boiling turn the heat to the low and skim off the scum with a raddle.\r
    ⑥Add sake, mirin, and soy sauce and simmer until the ingredients are soft.\r
    (if you dont have mirin, use sugar.)\r
    ⑦Turn the heat off, then put the lid on the pot, and leave it to cool.\r
    *Salad (broad beans and potato)\r
    ①Peel the potato and boil.\r
    ②Remove the beans from the pod, and boil a little in boiling water with some salt, then peel them.\r
    ③Combine the potato and broad beans in a bowl and add salt and pepper, then add mayonnaise and mix.\r
    *Japanese Rolled omlet\r
    ①Add 2 tbsp sugar, 1 tbsp mirin and 1/2 tsp soy sauce to 3 eggs and beat it well.\r
    Fry it with some oil on a frying pan.\r
    *Deep-fried chikuwa with cheese\r
    ①Cut chikuwa in half if its too long.\r
    ②Cut processed cheese into pieces (to put in the hole of chikuwa)\r
    ③Put the cheese into the hole of chikuwa, and cover it with tempura flour mixed with water, then cover it with breadcrumbs.\r
    (or cover it with cake flour, eggwash, and breadcrumbs and fry.)\r
    ④Fry with heated oil until light brown.\r
    【about the dishes】\r
    *Chikuwa is bamboo-shaped kamaboko (fish paste cake.)\r
    It can be used for various dishes and its also reasonable, so its an important ingredient for bento.\r
    *Japanese Rolled omlet can be different flavor between families.\r
    My rolled omlet is a little sweet, so it can be a good side dish for main dishes with strong flavor.\r
