  • Green Tea Macaron Recipe // How to Make French Macarons

    Crisp and delicate shells filled with creamy filling. Learn how to make a proper macaron cookie with feet and no cracks. An overall delightful green tea experience (but versatile to many different flavors as well).\r

    ⭐️Flourless Chocolate Cookies: \r
    \r
    Ingredients:\r
    1 c powdered sugar\r
    ¾ c almond flour\r
    3 ts matcha (green tea powder)\r
    2 aged, room temperature egg whites (eggs separated and covered in the fridge for a couple days).\r
    ¼ ts cream of tartar\r
    2½ tb sugar\r
    Filling:\r
    4 oz room temperature cream cheese\r
    2 tb room temperature butter\r
    1 ts vanilla extr\r
    3 ts matcha powder\r
    ½ c sifted powdered sugar (or more, depending on taste)\r
    \r
    Instructions:\r
    In your first bowl, sift together your powdered sugar, almond flour, and matcha. Whatever doesnt pass through, blitz through a food processor to make finer and sift again.\r
    Beat your egg whites until they get foamy. Sprinkle in your cream of tartar. Slowly spoon in your granulated sugar and beat until your whites have obtained white and glossy stiff peaks.\r
    Using a spatula, slowly incorporate your meringue into your dry, sifted mixture.\r
    Fill a piping bag fitted with a small, plain round tip and swirl even circles onto silpat/parchment.\r
    Rap the cookie sheet firmly onto your counter a couple times to release any trapped air bubbles and allow the trays to sit out for 15-20 minutes to develop a shell.\r
    Bake each tray individually at 350 for about 10 minutes.\r
    Cool completely then peel back and sandwich pairs with about a teaspoon of filling.\r
    To create the filling, cream everything together.\r

    French Onion Soup\r

    1 tbsp oil\r
    2 tbsp butter\r
    5-6 large onions, finely sliced\r
    salt and pepper\r
    ½ tsp sugar \r
    2 tbsp flour\r
    2/3 cup apple cider OR red wine\r
    8 cups vegetable or beef broth\r
    2-3 sprigs fresh thyme\r
    baguette crostini or croutons\r
    Gruyere cheese, grated\r
    \r
    In a large Dutch oven or saucepot heat oil and butter over medium heat.\r
    Add onions and stir until they are well coated.\r
    Cover and cook onions for 15 minutes.\r
    Remove the lid and season the onions with salt, pepper and sugar.\r
    Cook the onions for an additional 30 minutes, stirring often. Onions should be deep golden brown.\r
    Once onions are caramelized stir in flour and cook for 1 minute.\r
    Add broth and fresh thyme and bring the mixture to a boil.\r
    Reduce heat to medium-low and simmer for 30 minutes.\r
    Ladle soup into individual, oven-safe bowls and top with crostini and cheese.\r
    Bake at 375°F until cheese is melted and bubbly.\r
    Serve hot from the oven.\r

    Below are the two version of that recipe that are being taught in french culinary schools.\r

    the first one is quite fool proof and will not fail you and the second ones is more fragile and sensitive to cooking time as well as being a bit more eggy. (if this is what you prefer) \r

    Ingredients based on a litre of milk (makes 8 ramequins) :\r

    1 litre of milk\r

    75 grams of sugar\r

    Mille crêpe is a cake made with many layers of crêpe (thin pancake). Mille means a thousand in French. Although it is written in French, it is originated in Japan (I found this info on the Net). And of course, it is a very popular cake in Japan!!!\r

    I was so lazy that I made only 8 crepes and cut into half to make a half-round cake. hehe You will see how I did that in the end of the video ;)\r
    \r
    I used nutella and whipped cream for the fillings.\r
    They were absolutely delicious :D\r
    \r
    Of course you dont have to make Mille Crepe. You can just wrap your favorite filling in a sheet of crepe and enjoy!\r

    Nutella Mille Crêpe Cake\r

    Difficulty: Easier than you think!\r
    Time: 20min\r
    Number of servings: half round cake\r
    \r
    Necessary Equipment:\r
    26cm (10.2inch) frying pan\r
    \r
    Ingredients:\r
    ((8 crêpes))\r
    2 eggs *room temperature\r
    100g (3.5oz.) cake flour\r
    2 tbsp. granulated sugar\r
    2 tbsp. melted butter\r
    250ml milk *room temperature\r
    a few drops vanilla extr\r
    ((fillings))\r
    nutella (chocolate hazelnut spread)\r
    200ml fresh cream (heavy whipping cream)\r
    1 tbsp. granulated sugar\r
    \r
    Directions:\r
    ((8 crêpes))\r
    1. Sift the flour in a bowl. Add sugar and egg, and mix well with a wire whisk.\r
    2. Add half the milk and melted butter, and mix well. Strain the batter to remove lumps. Then add the rest of the milk and a few drops vanilla extr, and mix until smooth.\r
    3. Cover with a plastic wrap and leave the batter to stand at room temperature for 30 minutes.\r
    4. Use a nonstick pan, or wipe the surface of the frying pan with a thin layer of cooking oil using a paper towel. Heat the pan on medium, pour a ladleful of the crepe batter into the pan, slowly move the pan in a circular motion to spread the batter evenly.\r
    5. Cook the crepe until the edges begin to dry, then flip the crepe over and cook the other side for about 10 seconds.\r
    6. Leave them to cool completely.\r
    ((fillings))\r
    1. Combine fresh cream and granulated sugar in a dry, clean bowl. Float the bottom of the bowl in ice water, whisk the cream until it forms a soft peak.\r
    2. Place one layer of crepe on a plate. Spread the cream. Place another layer of crepe, and spread nutella. Repeat until you have used all the crepes.\r
    3. Rest the cake in the fridge for 1 hour and cut into half. Spread nutella (use it as a glue) and place the other half on top to make a half round mille crepe cake.\r
    4. Then again rest in the fridge until chilled and nutella hardens up. In this way, you can easily cut the cake.\r

    3 squares unsweetened baking chocolate, melted and cooled\r
    1 tsp vanilla extr\r
    1/2 cup (1 stick) butter, softened (do not use margarine)\r
    1 cup heavy whipping cream beaten to soft peak stage (can be seen here: )\r
    1 pastry pie crust (can be seen here: )\r
    whipped cream for topping\r

    Prepare your pie crust and blind bake it for 9-10 minutes at 350*. (Be sure to prick the crust to prevent it from rising). Set aside to cool completely.\r
    In a sauce pan, combine sugar and eggs over medium heat and cook until 160*, stirring constantly. Remove from heat and add in cooled melted chocolate and vanilla. Set aside to cool for 1-2 hours.\r
    Put the butter into a large bowl and beat on high speed using an electric mixer until light and fluffy (about 2 minutes). Add in cooled chocolate mixture and beat on high speed for 5 minutes, scraping sides of bowl down occasionally. Fold in whipped cream. Pour mixture into your pie crust and refrigerate at least 8 hours to set up. Decorate the top any way you choose using additional whipped cream.\r

    Pumpkin Scone Recipe\r
    Makes about 15 scones\r
    \r
    Ingredients\r
    2 cups flour\r
    1/3 cup of packed brown sugar\r
    1 ½ tsp cinnamon\r
    ½ tsp cloves\r
    ½ tsp nutmeg\r
    1 tsp baking powder\r
    ½ tsp baking soda\r
    ¼ tsp salt\r
    1 stick cold butter, cubed \r
    ½ cup pumpkin puree\r
    3 T milk + 1 T milk for eggwash\r
    1 egg + 1 beaten egg for eggwash\r
    2 tsp vanilla extr\r
    ¼ cup Cinnamon Toast Crunch, crushed\r
    \r
    Glaze\r
    ½ cup powdered sugar \r
    1 T milk\r
    \r
    Directions:\r
    1. Preheat oven to 400F\r
    2. Whisk together flour, brown sugar, cinnamon, cloves, nutmeg, baking powder, baking soda, and salt. Set aside.\r
    3. In a separate bowl, whisk together the pumpkin puree, 1 T of milk, 1 egg, and vanilla extr.\r
    4. Pour wet ingredients over dry and combine with a spatula, being careful not to overwork dough\r
    5. Roll dough out on floured work surface until 1” thick and cut out scones with circle cookie cutter. (I used a 2 ½” scallop cutter). Beat together remaining 1 T milk and egg for eggwash, and brush onto scones. Sprinkle crushed Cinnamon Toast Crunch onto scones. Bake on parchment lined baking sheet for 10-12 min.\r
    6. For glaze, mix together powdered sugar and milk.\r
    7. Allow scones to cool, then drizzle glaze on top. Sprinkle with additional crushed Cinnamon Toast Crunch.\r

    Even if you dont have a fancy French fry cutter, you can use a regular kitchen knife and a cutting board, and still make perfect fries !\r

    Dont worry ! - if you dont have a deep fryer, you can use a regular pot on your stove. I encourage you to get a thermometer for deep frying, this will allow you to get the perfect oil temperature for your French fries.\r

    French fries, salt, and malt vinegar, thats how I love mine :-) maybe a little spicy mayo on the side. A scoop of mayo and a sprinkle of cayenne pepper is all you need to make a great spiced mayonnaise to dip your French fries in.\r

  • Delicious Breakfast Sandwich: How To Make A Spam Egg & Cheese Sandwich

    Spam Egg & Cheese Breakfast Sandwich Recipe\r

    Ingredients\r

    4 Pieces of Spam, sliced\r
    2 Tbs Vegetable Oil\r
    1 Large Egg\r
    2 Slices of Toasted White Bread\r
    1 Slice of Singles White American Cheese \r
    Pinch of Salt\r
    Pinch of Black Pepper\r

    Instructions\r
    1. Ok, so what youre going to do first is open your can of spam! Youre only going to be using about half or a little less than half of the can. Slice the spam into 4 thin to medium size pieces. How thick you cut your spam is totally up to you!\r
    2. Next, youre going to add your egg to a small bowl. Season the egg with a pinch of salt and pepper, then beat it in for 45 seconds to ensure its well battered. The reason I dont use much salt on a spam egg and cheese sandwich is because spam is pretty salty. Theres a good amount of sodium in cheese as well so, salt isnt even neccesary. Now you can add a pinch of onion or garlic powder if you like but this is a recipe that you dont want to over season because youre going to get all the flavor you need from the spam and cheese!\r
    3. Place a skillet over medium-high heat. We do not need to slow cook this we just want to brown the spam. I believe they are already partially cooked so browning them is all we want to do. Add the oil and wait about a minute for the oil to get hot, then add the spam. Fry the spam for 2 minutes on each side or until they are nice and crispy. DONT OVERCOOK THE SPAM!!! Doing so will result in dry burnt spam!\r
    4. Once done, remove the spam and place them onto a slice of toasted bread.\r
    5. Place the same skillet over low heat this time. Were frying the egg now so you need to cook it on low.\r
    6. Pour the egg into the skillet! Make sure the egg is spreaded out. \r
    7. After about 2 minutes, once the egg is nearly done, slice your cheese single in half and place it onto the egg.\r
    8. Fold the egg and place it over the spam and toasted bread to create a Spam Egg & Cheese sandwich. You are going to love this amazingly delicious breakfast sandwich! And trust me, youll be making it again…. Enjoy!\r

    I love breakfast sandwiches…. but theres no breakfast sandwich I love more than a spam egg and cheese sandwich. I fell in love with spam egg and cheese sandwiches as a kid during the 3rd grade. There was a food stand that sold breakfast and lunch right outside of my elementary school in North Philadelphia, which was only a few blocks from where I lived. I obviously didnt want to go to school… but most kids dont…. theyd rather sit home and watch their favorite morning cartoons. But I remember these delicious spam egg and cheese sandwiches always being the one thing to put a smile on my pouting face. This scrumptious breakfast sandwich was all I needed to brighten up my day, I enjoyed them that much. Nowadays, I dont make them as much only because im barely up in the early morning hahahaha but when I am this is one of my go to breakfast recipes. This sandwich is delicious and the best part of all is, it takes no longer than 10 minutes to make.     Shawarma sandwiches are a tasty way to add meat to pita bread or similar unleavened bread. Chicken makes a good filling because it is easy to cut into sandwich sized slices and tastes delicious.\r

    Shawarma is vastly popular across the middle-east. Chicken baked in a yoghurt marinade, rolled up in pita bread and served with tahini.\r

    Ingredients - How to make Lebanese Chicken Shawarma Wrap - Delicious Spicy Chicken Shawarma\r

    *My 1 tbsp Oil = 50 ml or (One Ladle = 50 ml)\r
    \r
    *2 whole Boneless Chicken Large Breast\r
    *6-8 Pita Bread \r
    *1/2 tsp Black cardamom powder\r
    *2 tsp Garam Masala Powder\r
    *1 tsp Black pepper powder\r
    *2 tbsp Minced garlic or finely chopped Garlic\r
    *2 tbsp Yoghurt/Curd\r
    *3 tsp Olive oil or Vegetable Oil\r
    *1 tsp Red chilli powder\r
    *2 tbsp Malt vinegar, Apple cider vinegar or white balsamic vinegar\r

    Okay, so technically this recipe should ually be called Shawarma-Style Chicken. True shawarma is cooked with stacked, spice-marinated meats lamb, turkey, chicken, beef, or a mix of meats on a vertical spit. \r
    \r
    The shawarma turns and cooks on the spit for hours and hours, basted in fat and its own juices. Fat = flavor = tasty, amazing shawarma. Thin slices of meat are shaved from the surface and served, either on their own or tucked inside a warm flatbread, topped with tahini or garlic sauce. Shawarma is one of lifes great pleasures.\r
    \r
    Ive been trying to replicate the flavor of shawarma at home for months, playing with different spice combinations and cooking methods. At first I tried buying premade shawarma spice blends from the Middle Eastern markets, but none of them made my mouth happy. I needed more spice, more flavor, more oomph. So I began to experiment. Then finally, last week, I nailed it.\r
    \r
    This recipe is probably as close as Ill ever come to making shawarma at home. My family says its even better than the shawarma at our local Lebanese restaurant. \r
    \r
    You have two choices for cooking this recipe in the oven or on the grill. To be honest both cooking methods taste great, there really isnt a big difference between the two. \r
    \r
    I use boneless skinless chicken meat (a combination of dark and light meat) in the recipe. Shawarma gets a lot of its flavor from the meat fat that it is basted in. Ive replaced the flavor of the skin fat with olive oil, including a final saute in olive oil prior to serving. \r
    \r
    It may seem strange to saute meat that has already been cooked, but youre going to have to trust me on this one. The extra saute adds a ton of flavor and really gives it a shawarma-like texture that cant be replicated in the oven or on the grill. \r
    \r
    If youre trying to cut down on your oil intake you dont need to do the extra saute, it will save you 2 tablespoons of olive oil… it wont taste exly like shawarma, but it will be yummy. But please, dont replace the chicken thighs with breast meat. \r
    \r
    This dish really needs some dark meat in it to make it taste great. You can make it with all chicken thighs, if you prefer (I ually love it that way), but dont sub all chicken breast. Pretty please.\r

    Lynn demonstrates how to make Oreo Cupcakes with Oreo Buttercream. This is a delicious dessert. I made half of the recipe for the cupcakes, but the entire buttercream in the demonstration.     Cupcakes:\r
    \r
    3 cups cake flour\r
    1 Tablespoon baking powder\r
    ½ teaspoon salt\r
    16 Tablespoons unsalted butter, at room temperature\r
    2 cups sugar\r
    5 large eggs, at room temperature\r
    1-1/4 cups buttermilk, at room temperature\r
    1 Tablespoon vanilla extr\r
    20 Oreo cookies (halves, with the cream filling attached)\r
    \r
    Frosting:\r
    \r
    8 Tablespoons butter, at room temperature\r
    ½ cup vegetable shortening\r
    4 cups powdered sugar (1 pound)\r
    ½ teaspoon vanilla extr\r
    6 Tablespoons Oreo cookies, finely crushed (I used the halves from the cupcakes without the filling)\r
    Oreos cut in half for garnish, or Mini Oreos\r
    \r
    Preheat oven to 350°. \r
    \r
    Line a muffin pan with cupcake liners. Twist Oreos in half and set aside the extra cookies for crushing for the frosting. Place the side with cream filling in the bottom of each cupcake liner, cream side up.\r
    \r
    Combine the flour, baking powder and salt in a medium bowl. Set aside. Cream butter and sugar in the bowl of an electric mixer. Add the eggs, one at a time and beat after each addition. Combine the buttermilk and vanilla. Alternately add the dry ingredients and the liquid to the batter, beginning and ending with the dry ingredients.\r
    \r
    Fill lined cupcake tins with the batter. Bake 15-18 minutes, or until a toothpick inserted comes out clean. Allow to cool 10 minutes in pan before transferring to a cooling rack.\r
    \r
    For the frosting, in the bowl of electric mixer, cream the butter and shortening on medium-high speed until light and fluffy, about 2-3 minutes.\r
    \r
    Reduce the mixer speed to low and add the powdered sugar, about ½ cup at a time, until thoroughly mixed. Add the vanilla flavoring and the Oreo crumbs and mix well. ***This was a very stiff frosting and because I wanted to pipe it on the cupcakes, I added a little bit of milk to get the consistency that I desired. \r

    Frost the cupcakes as desired and top with half of an Oreo or a mini Oreo for garnish.\r

  • Stuffed Rava Idli Recipe - Healthy Indian Evening Snacks Recipes

    Sooji or Rava idli is a very healthy Indian recipe as an option for breakfast or Kids lunch box. Generally, kids dont like idli. But they will love this idli recipe because of its stuffing. Full recipe: \r

    Ingredients:\r
    For Idli Batter:\r
    2 cups of Semolina\r
    1 cup of thick yoghurt\r
    Salt to taste\r
    1 sachet Eno\r
    \r
    For stuffing:\r
    3 medium-sized boiled and mashed potatoes\r
    1/3 cup French beans finely chopped\r
    1 medium sized Onion finely chopped\r
    1/3 cup carrot finely chopped\r
    1/4 cup Capsicum finely chopped\r
    1/4 cup boiled peas\r
    Finely chopped Spring Onions\r
    ½ inch piece of grated ginger\r
    ½ tsp Mustard seed\r
    Few sprigs of curry leaves\r
    3/4 tsp Sambhar Masala\r
    Salt to taste\r
    1/2 tsp Garam masala\r
    1/2 tsp Coriander powder\r
    1/4 tsp mango powder\r
    1/4 tsp Turmeric powder\r
    1/2 tsp red chilly powder\r
    1 ½ -2 tsp Oil \r
    \r
    How to make sooji or Rava Idli for Breakfast:\r
    1. Take a deep bowl and add suji/semolina, yoghurt, salt, and mix it well. Now add water gradually and make a smooth batter. Keep on adding water until you get the proper consistency. The batter should not be very thick or thin. The consistency of the batter should be pourable.\r
    2. Mix it well with a spoon so that there should be no lumps in the batter.\r
    3. Cover it and let the batter rest for 15-20 minutes. Meanwhile, lets prepare the Stuffing.\r
    4. Take a non-stick pan and put oil in it, once the oil becomes hot add mustard seed and let it crackle. Now add few curry leaves, grated ginger and all the chopped veggies (Onion, fresh and boiled peas, capsicum, carrot, French beans). Sauté it on medium flame and cook till it becomes little soft. Do not overcook the veggies let it be crunchy. Once the veggies become little soft add boiled and mashed potatoes, finely chopped spring onions and all the spices-Salt to taste, red chilly powder, turmeric powder, coriander powder, mango powder, garam masala, sambhar masala, mix it until all the spices get blended well with the mixture. Keep aside and let it cool down for some time.\r
    5. After 15 minutes uncovered the batter and you will see the batter has become smooth and slightly thick as rava absorbs the water so add water accordingly to get the right consistency, mix it well. \r
    6. Batter is ready now but before adding eno keep the water for boiling and grease the mould. \r
    7. Take a deep pan and pour 1 1/2 glasses of water in it and let the water boil. Make sure that the water should start boiling before placing the idli mould in it. \r
    8. Now take an Idli mould and grease the idli moulds with some oil and keep aside.\r
    9. At the very end add eno and mix it well. After adding eno/soda do not stir too much otherwise bubbly effect will go away. After adding eno fruit salt doesnt keep batter for a long time otherwise Idli will not be spongy so spread the batter immediately. \r
    10. Now take your greased idli moulds and spoon a tablespoon of batter in the bottom and put the mixture patties in the centre of batter (To make the stuffing easy I have made small thin patties but you can also spread the mixture on top of the batter). Now spoon a tablespoon of batter again on top. Make sure that everything is totally covered.\r
    11. Repeat the same process for rest of the idli moulds.\r
    12. Put the idli mould in boiling water, cover with the lid and cook it for 7-8 minutes on medium flame.\r
    13. After 7-8 minutes uncovered the lid and you will see the Stuffed Rawa idli has become fluffy. Take out the idli mould from the pan and let it cool down for some time. Once it cools down a bit scratch the sides with a knife and removes the Stuffed Rawa Idli from it.\r
    14. Cut Stuffed Rava Idli into half and serve hot. It goes well with coconut/nariyal chutney but if you do not have nariyal chutney can serve with any coriander chutney or tomato ketchup.\r

    From the insane Sun Dried Tomato Horseradish Spread to the fantastic steak preparation Dan brought to this table, this recipe really stood out as one of my favorite sandwich preparations of all time! \r

    Perfect Steak Sandwich\r
    Ingredients:\r
    One small onion\r
    Honey or sugar\r
    Sprig of thyme\r
    Sundried tomatoes\r
    Horseradish\r
    Mayo\r
    Skirt steak\r
    \r
    Slice your onion place in a greased pan over medium heat for 1-2 minutes. Turn heat down to medium low and allow them to cook through for 7-8 minutes. \r
    Add a touch of honey or sugar for extra caramelization. Set aside.\r
    Optional step: Add a sprig of thyme to your onions for added flavor. \r
    Boil sundried tomatoes to soften. \r
    Grate a chunk of horseradish into your food processor. \r
    Add softened tomatoes to food processor and blend. \r
    Remove from food processor and in a bowl fold 3 tbsp of mayo into your tomato mixture. Set aside. \r
    Season your skirt steak with salt and pepper to taste. Allow it to sit for about 5 minutes. \r
    Heat some oil in a pan and toss in your steak. Continue turning your steak every 15 seconds until it is cooked to your liking.\r
    Remove and let sit for 10-15 minutes. \r
    Slice open your choice of bread and toast cut side down on your pan. \r
    Spread your tomato spread on your bread.\r
    Reccommended: Add peashoots over your spread. Delicious!\r
    Lay on your steak over your spread and pile on your caramelized onions. ENJOY!\r
